Sometimes I eat a rainbow of colorful vegetables, this time I just fancied green foods.
I had a bunch of broccolini, which I know many of you have probably never heard of.
lts grown in the united States primarily Arizona and California, obviously we have it in Australia.
Other than that from what I found out only Japan, Mexico and Canada may have some in selected markets.
I love broccolini and eat a small bunch at least four times a week. I never boil nor overcook it as I love my vegetables still firm when I eat them.
I like to saute broccolini in a little coconut oil and add fresh garlic and a squeeze of lemon before serving. Today I kept lunch simple, only adding half an avocado and fresh rocket / arugula before serving.
Miss Bear is addicted to broccolini and gets her little plate, so I can eat mine in peace...
